Getting data from closed cases without queries

I would like to get data from ongoing or closed cases in order to produce some statistics. For example, lets say that in each case the user must type their age. I want to count and display graphically (e.g. in a chart) the age typed by users.

This is different than queries. In queries you can display the cases that users typed a specific age.

Is this possible?
